Tofu (soy bean curd), firm, as purchased

Soy bean extract, commercially prepared, that has set to a firm texture. Ingredients include water, soybeans, glucono-delta lactone, and nigari (magnesium chloride).

The majority of nutrients were derived from a composite sample of 8 purchases of firm tofu (including some labelled as organic tofu) (Evergreen, Heng V, Hakea, Pureland, 2x Joyce, Blue Lotus & Chung Hing) in Melbourne in February 2006. Cholesterol and retinol were imputed.
