Sweetcorn, fresh on cob, raw

The round, yellow kernels of maize formed on an ear which is surrounded by a green husk. Kernels removed from fresh cobs. Uncooked.

The majority of nutrients including proximates, vitamins and minerals were derived from 5 purchases of raw sweet corn from local supermarkets spread across the socioeconomic scale in Sydney in 1984 (Wills et al 1987) and also from a composite of 4 cobs purchased from each of six supermarkets in SA in 1988 (AGAL, 1988). Proximates, minerals ( Ca, Cl, Cu, F, Fe, K, Mg, Mn, Na, P, K, Se, I and Zn) were derived from 7 samples of raw sweetcorn grown in QLD and purchased from Melbourne markets in 2000. Fatty acids were imputed from maize oil. Raffinose, stachyose, moisture, dietary fibre, alpha tocopherol, alpha and beta carotene, vitamin B6, folates, biotin, cryptoxanthin, pantothenate and minerals (Cl, Cu, F, Mn, P and Se) were derived from 10 samples of sweetcorn purchased in 1998 from supermarkets in Melbourne (ANZFA Folate Project, 1998). Cholesterol and retinol were imputed zero based on scientific literature.
