Kangaroo, rump, raw
Protein, ash, vitamins and minerals were analysed from a composite of 10 samples of raw kangaroo rump supplied by two producers (5 each x Macro meats, SA and Southern Game Meat, NSW) in February 1996 (ANZFA, 94/95 Food Composition Project). Moisture and iodine were analysed from 6 samples of raw kangaroo steak (3x Macro Meats, 2x unbranded and 1 x Red gum commodities) purchased from supermarkets in Melbourne in 2005 (FSANZ, Iodine Project, 2006). Fat and fatty acids are mean values derived from individual analysis of 20 samples of raw kangaroo rump provided by 2 suppliers in Qld and SA (Beilken & Tume 2008). Fibre and sugar imputed 0.
