Emu, steak, raw
The majority of nutrients including proximates, fatty acids, Ca, Fe, Mg, Na and P were derived from individual analysis of 10 samples of mixed emu steak provided by 2 suppliers in Qld & Vic (Beilken et al 2007). Starch, vitamins and remaining minerals were derived from analysis of a single purchase of Galston Game Farm emu meat in Sydney (Arcot 2005). Fibre was imputed as zero.
