Ham, leg, lean & fat
The majority of nutrients including proximates, vitamins and minerals were derived from a composite sample of 5 brands purchased from retail outlets in Sydney in 1984. Samples analysed included 5x boned pressed slices from delicatessens, 1x off-the-bone slice from a department store, 1x Farmland packaged slices, 1x Mayfair packaged slices, 1x Watsonia packages slices. Minerals (I, Ca, Na, K, Se, Cr, N, Mo, P, Mn, Cl) were also determined in leg ham purchased from Vic, SA and QLD in 2004 (22nd ATDS). Heavy metals were derived from a composite sample of 21 leg ham samples purchased from NSW, NT, Qld, SA, Tas, Vic, and WA (20th ATDS). Fatty acids were determined in combined lean and fat from leg ham, together with shoulder ham. Carotenes were imputed.
