Cucumber, common, unpeeled, raw
Proximates, vitamins and minerals were derived from a composite of five 1 kg purchases of common green cucumbers from Sydney outlets in 1983-4 (Wills et al. 1987). Iodine and some vitamins and minerals were derived from a composite sample of 7 purchases of green cucumbers in 2000. Metals As, Cd, Cr, Hg, I, Mo, Ni, Pb and Se were derived from a composite of 9 cucumber samples purchased nationally (ATDS). Folate was borrowed from the USDA, record 11205. Retinol, folic acid and cholesterol were imputed.
