Chicken, drumstick, lean, baked without oil

Flesh from drumstick portion of a chicken. Skin removed. Cooked by baking.

The majority of nutrients including proximates, vitamins, minerals and fatty acids were derived from a composite of 10 purchases of raw chicken drumstick, baked after purchase without oil/fat, skin and bone removed after cooking, purchased nationally from a supermarket or butcher store in each state and territory capital city and 2 regional centres in NSW and QLD (2006 - Key Foods Program). Protein, moisture, tryptophan, vitamins B3, B6 and B12 were determined in the 10 individual purchases from the same program. F, Cl and biotin were also determined in the drumstick meat of 10 chickens sourced from Inghams and Steggals (1998 - AGAL). As, Cd, Cu, Hg, Pb, Se, Zn, Tin and Sb were determined in 9 samples purchased nationwide (1998 - 19th ATDS). Moisture and iodine were determined in a composite of 8 purchased of raw chicken drumsticks purchased from Melbourne supermarkets, then baked without oil until cooked (2006 - Australian Iodine Program). Fibre was imputed as 0.
