Broccoli, frozen, boiled, drained
Proximates, minerals and vitamins were derived from a composite sample of 6 purchases (2x Farmland, 2x Birds Eye and 2x Woolworths) of frozen broccoli from Adelaide supermarkets in 1988. Samples were added to boiling unsalted water and simmered for 5 minutes until tender, then drained, and cooled. Folate was imputed from fresh boiled broccoli. Cholesterol, folic acid and retinol were imputed zero based on the scientific literature. Weight loss on cooking 6%.
