Proximates, minerals and fatty acids were derived from a composite of 2 samples of osso bucco purchased from 2 Italian restaurants in Sydney during March 1982. Vitamins and minerals were also derived from a composite of 2 samples of osso bucco purchased from Sydney restaurants in 1991.
