Lettuce, mignonette, raw
Proximates, vitamins and minerals were derived from a composite of five purchases of mignonette lettuces from Sydney outlets in 1983-4 (Wills et al. 1987). As, Cd, Cu, Hg, I, Mo, Ni, Pb, Sb, Se, Sn and Zn were derived from a composite of mixed lettuce types purchased nationally (ATDS). Folate was imputed from raw cos lettuce. Retinol, folic acid and cholesterol were imputed.
