Leek, raw

Long and cylindrical in shape, with thick white stalks and green fan-shaped leaves. Uncooked.

Proximates, vitamins and minerals are derived from a composite of five 1kg purchases of leek from Sydney outlets in 1983-4 (Wills et al. 1987). Folate and some vitamins and minerals are derived from a composite sample of 10 purchases of leek in 1997 (1997/98 Folate Program). Amino acids were determined from 2kg of edible portion of leek purchased from Footscray Wholesale Markets in Melbourne in 1984/85 (Fox et al. 1988). Retinol, folic acid and CHOL are imputed.
