Liver tissue from a lamb, grilled.

The majority of nutrients were derived from 10 samples collected from Sydney. The ratio of purchases was 2:1 butchers shop to supermarket. The samples were cooked after dressing and inedible parts removed. Sugars and fibre were imputed zero. As, Cu, Cd, Hg, Pb, Sb, Se and Sn were determined in samples collected nationally and grilled (19th ATDS). I, Se, Ni, Cr and Mo were determined in 10 samples of grilled lambs liver purchased in ACT, NSW, Tas, Vic & WA in August 2004 (22nd ATDS). Moisture, vitamins (alpha and beta carotene, alpha tocopherol, cryptoxanthin, folates, pantothenate and retinol) and minerals (Ca, Cu, Fe, I, K, Mg, Mn, Na, P and Zn) were analysed from 8 samples of raw lamb liver purchased from Melbourne supermarkets and then fried in butter in 2005 (FSANZ, Iodine Project, 2006).
