Garlic, peeled, raw

Bulb made up of segments called cloves, covered by a papery shell. Uncooked.

The majority of nutrients including proximates, vitamins and minerals were derived from a composite of five 1 kg purchases of garlic from 5 retail outlets from Sydney suburbs in 1983/1984 (Wills et al. 1987). Metals As, Cd, Pb, and Hg were derived from a composite of 9 samples purchased nationally (96 AMBS). Folate was borrowed from the USDA, record 11215. Retinol, folic acid and cholesterol were imputed.
