Chicken, breast, lean, stir fried without oil

Flesh from breast portion of a chicken. Skin removed. Cut into thin strips and cooked by frying without the addition of oil.

The majority of nutrients including proximates, vitamins, minerals, sugars, fatty acids and cholesterol were derived from a composite of 10 purchases of chicken breast meat stir fried without oil/fat after purchase, purchased nationally from a supermarket or butcher store in each state and territory capital city and 2 regional centres in NSW and QLD (2006 - Key Foods Program). Protein, moisture, tryptophan, vitamins B3, B6 and B12 were determined in the 10 individual purchases from the same program. F, S and biotin were determined in the breast meat of 15 chickens sourced from Inghams and Steggals (1998 - AGAL). Folate was imputed from a composite of 6 samples purchased in Sydney, cooked by grilling (2005 - Arcot, J., Folate Analysis in Selected Foods). As, Cd, Pb, Hg, Cu, Sb, Se and Zn were determined in 21 purchases of chicken breast meat purchased nationwide, grilled with skin then skin removed after cooking (2000 - 20th ATDS). Se, I, Ni, Cr and Mo were determined in a composite of 6 purchases of skinless chicken breast meat, purchased in NSW, Tas and WA and grilled after purchase (2004 - 22nd ATDS).
