Cheese, cheddar, regular fat

Australian and imported cheddar cheese. Prepared by curdling cows milk with rennet, followed by curing. Includes unsliced mild, tasty and vintage varieties.

The majority of proximates, vitamins, minerals, fatty acids and tryptophan were derived from 2 programs: (1) a composite of 10 purchases of 6 brands (4x Coon, 2x Bega, 1x Black & Gold, 1x Devondale, 1x Homebrand, 1x IGA) of unsliced cheddar cheese sampled nationally in 2006 (KFP, 2006); and (2) either individual or composite analyses of 10 purchases of 6 brands (2x Mainland, 2x Devondale, 2x Bega, 2x Black & Gold, 1x IGA, 1x Coles) of unsliced cheddar cheese sampled nationally across the summer and winter months of 2008 (KFP, 2008). Folate was derived from a composite of 6 purchases of 4 brands of cheddar cheese (Mainland, Coon, Bega, Homebrand) purchased in Sydney (Arcot, 2005). Ca, Chloride, Fe, K, Mn, Na, P, Cr, I, Mo, Ni, Se, As, Cd, Cu, Hg, Pb, Sb and Zn were also from samples of cheddar cheese purchased nationally in 2000, 2002 and 2004 (19th, 20th and 22nd ATDS). Fibre was imputed zero based on product composition.
