Cake, carrot, iced, commercial

Commercially prepared cake prepared from carrot, eggs, flour, sugar and vegetable oil and generally containing walnuts. Contains added icing generally made with cream or neufchatel cheese.

Proximates, sugars, fatty acids, vitamins and minerals were derived from a composite sample of 8 carrot cakes (4x cake shop, 2x supermarket and 2x frozen Sara Lee variety) purchased in SA (2000 Food Comp Program). Note very low sum of proximates (88%) - starch and fibre values appear lower than anticipated and cakes may also contain other carbohydrate components not identified in analysis.
