Brussels sprout, frozen, boiled, drained
Proximates, minerals and vitamins were derived from a composite sample of 6 purchases (2x Farmland, 2x Black and Gold and 2x McCain) of frozen brussel sprouts from Adelaide supermarkets in 1988. Samples were simmered for 8 minutes in unsalted water until tender, then drained and cooled (AGAL, 1991). Folate and dietary fibre were imputed from fresh boiled brussel sprouts. Cholesterol, folic acid and retinol were imputed zero based on the scientific literature.
