Beef, tripe, simmered

Typically made from the first three of a cattles four stomachs, the rumen (blanket/flat/smooth tripe), the reticulum (honeycomb and pocket tripe), and the omasum (book/bible/leaf tripe). Generally sold bleached so that it is white in colour. Tripe chopped, simmered, drained.

The majority of nutrients were derived from seven samples collected in Sydney. The ratio of purchase was 2:1 butchers shop to supermarket. The samples were cooked after dressing and inedible parts removed. Sugars and fibre were imputed as zero.
