Tofu (soy bean curd), smoked, as purchased

Soy bean extract, commercially prepared, that has set to a firm texture and to which smoke flavour has been added. Other ingredients include water, soybeans, nigari, and salt.

The majority of nutrients were derived from a composite sample purchased in Sydney in 1995. Fatty acids, tocopherols, carotenes, selenium and iodine were imputed from firm tofu. Cholesterol and retinol were imputed.
