Tofu (soy bean curd), silken or soft, as purchased
Proximates and the majority of vitamins and minerals were derived from a composite sample of 1 brand of silken tofu purchased in Sydney in 1995. Iodine, selenium, carotenes, tocopherols and folate were estimated from firm tofu analysed in 2006, after adjustment for dry matter differences. Fatty acids were imputed from firm tofu. Cholesterol and retinol were imputed. Note high sum of proximates - data should be used with caution.
