Proximates, minerals and fatty acids were derived from a composite of 10 samples of spaghetti napoletana purchased from 5 Italian restaurants in Sydney during March 1982. Vitamins and minerals were derived from a composite of 4 samples of spaghetti napoletana purchased from Italian restaurants located in Sydney in 1991.
