Chicory, raw

A leafy vegetable with long white leaves, typically used in salads, stews and casseroles. Uncooked.

The majority of nutrients including proximates, vitamins and minerals were derived from a composite sample of five purchases of raw chicory, purchased in season at five socioeconomically diverse retail outlets in Sydney during 1983 and 1984. Retinol and cholesterol values were imputed based on international literature.
