Bulgur (burghul, burgaul), boiled, no added fat or salt

A quick-cooking form of whole wheat that have been cleaned, parboiled, dried, ground into particles and sifted into distinct sizes (fine, medium and course grinds). Prepared according to label instructions, generally by boiling in unsalted water without added fat or oil.

Sugars, fatty acids and some vitamins and minerals were derived from a composite sample of 3 brands of bulgur (3x Unbranded, 2x Lowan and 1x Sungrain) purchased in Adelaide. Samples were cooked according to label instructions (AGAL 1987 - Seafood and Products, Cereals). Cu, Mn, P, Cl, Se, S, F, ATOC, B6, pantothenate and biotin were derived from a composite sample of 3 brands of bulgur (4x Lowan, 2x Old Grain Mill and 2x unbranded) purchased from Adelaide in 1993. 200 g sample was boiled in 1 L of unsalted water for 20 mins until tender and drained (1993 Cereal Catch up program).
