Sweetcorn, fresh on cob, boiled, with salt, drained
The majority of the nutrients including proximates, vitamins and minerals were derived from 6 purchases of fresh corn on cobs from supermarkets in Adelaide during 1987 (AGAL, 1988). Kernels and salt water were placed in an uncovered saucepan, brought to the boil, then simmered until cooked, (approx 3-4 mins), immediately drained and allowed to cool. The ratio of kernels to salt was as per average ratio in the canned product. Fatty acids were imputed from maize oil. Folate was estimated from fresh raw sweetcorn. Cholesterol and retinol were imputed zero based on scientific literature.
