Silverbeet, raw

Vegetable with, large white stem and frilly dark green leaves. Sometimes known as spinach. Uncooked.

The majority of nutrients including proximates, vitamins and minerals were derived from a composite of 5 purchases of silverbeet from local supermarkets spread across the socioeconomic scale in Sydney in 1984 (Wills et al 1986). Folate, proximates, minerals and vitamins were derived from 10 samples of silverbeet purchased in 1998 from Melbourne supermarkets (ANZFA, Folate Project, 1998). Cholesterol and retinol were imputed zero based on scientific literature.
