Nut, pistachio, unsalted

A small green kernel, covered with a thin skin, encased in a smooth, cream coloured, brittle shell which separates from the kernel. Shell removed. Does not contain added salt.

The majority of nutrients including proximates, vitamins and minerals were derived from a composite of 6 samples of raw unsalted pistachios (all unbranded and sold loose) purchased from 4 stores in Adelaide in 1989 (Nuts & Legumes Program, 1990). Cholesterol and retinol were imputed zero. Values are supported by industry analytical data for pistachio nuts, roasted and salted (Sanitarium, 2008). Note low sum of proximates, possibly due to analytical difficulties with carbohydrates - data should be used with caution.
