Cucumber, telegraph, unpeeled, raw

Long and cylindrical in shape with dark green skin and white flesh with a crisp texture. Uncooked.

Proximates, vitamins and minerals were derived from a composite of five 1 kg purchases of telegraph cucumbers from Sydney outlets in 1983-4 (Wills et al. 1987). Folate was borrowed from the USDA, record 11205. As, Cd, Cr, Hg, I, Mo, Ni, Pb and Se were derived from a composite of 9 cucumber samples purchased nationally (ATDS). Retinol, folic acid and cholesterol were imputed.
