Cassava, peeled, raw

Long, coarse brown tuber, with a fibrous flesh. Uncooked.

Proximates, vitamins and minerals were derived from a composite of 5x 1 kg samples of fresh white flesh cassava and 5x 1 kg samples of fresh yellow cassava purchased from 5 Sydney retail outlets during 1993/94 (Wills et al. 1987). Folate was borrowed from the USDA, record 11134. Retinol, folic acid and cholesterol were imputed.
