Venison, leg medallion, lean, dry fried

Venison from the hind portion of the carcase. Dry fried for 2 minutes each side without the addition of oil until cooked to a ‘medium rare’ state then left to rest.

The majority of nutrients including proximates, fatty acids, cholesterol, amino acids, vitamins and minerals were derived from a composite of 4 Silver Fern branded samples of leg medallion from New Zealand. Note that the sum of fatty acids does not equal 100% and there may be fatty acids present that have not been reported.
