Turkey, hindquarter, lean, skin & fat, raw
Three Tegal size 15-21 frozen hindquarters were purchased from supermarkets in SA in December,1991. Fat and skin able be to separated was removed. Composite sample was analysed for proximates, minerals, vitamins, carbohydrates and fatty acids (AGAL,1992). Data were recombined in proportion to the amounts of lean and fat/skin in the original sample.
