Proximates (except dietary fibre), vitamins, minerals and fatty acids were derived from a composite of 5 samples purchased from Sydney restaurants (Arcot 1999). Dietary fibre was imputed based on the composition of the product. Iodine was estimated based on approximate proportions of nori and seafood extender. Note low sum of proximates (95%) - data should be used with caution.
