Rice, white, boiled, with added salt

Grain that has had its husk, bran and germ removed. Cooked by boiling in salted water.

The majority of nutrients, including proximates, fatty acids, vitamins and iodine were derived from a composite sample of 4 brands of long grain rice (Sun Rice Premium White, Riviana Pakistan Basmati, Koala Brand and Black and Gold) purchased from supermarkets in NSW, QLD, WA and SA in 2008 (2008 - KFP). Beta carotene and cholesterol were imputed 0. Biotin and some minerals (Cl, Cu, F, K, Mn, Na, P & S) were also derived from a composite sample of 4 brands of rice (2x Sunwhite long grain, 2x Sunlong, 2x Sunwhite calrose and 2x Mahatma) purchased in Adelaide. Cooked as per the directions on the packet with the addition of 5 g of salt for every 500 g of rice and 1.5 L of water (1993 Cereal catch-up Program). I, Cr, Mo, Ni and Se were determined in a total of 6 samples purchased in ACT, NSW, SA in August 2004 (22nd ATDS). As, Cd, Hg, Pb were determined in a total 9 samples purchased in 3 states in 1996 and 2000 (18th and 20th ATDS). Some minerals (Ca, Fe, Mg) were derived from the 23th ATDS.
