Mutton, casserole, untrimmed, casseroled

Raw mutton from the fore portion (shoulder) of the carcase. Browned, simmered in minimal water for 2 hours then drained. Lean muscle meat with internal and external fat attached.

Nutrient values have been calculated by combining values in the separable lean (94.15 x 08A20610) and separable fat (5.85 x 08A20646) records in the proportions found in an average sample of untrimmed casseroled mutton casserole.
