Hamburger, beef pattie, with cheese, lettuce, sauce, fast food style

Commercially prepared grilled beef burger patties (2), with processed cheese (1 slice), pickles, lettuce, sauce and onion in white bread roll, as served in fast food chains. McDonalds Big Mac is an example of this style of food.

Fat and fatty acids were determined in 10 samples purchased in Sydney in 2005. Protein, carbohydrates and sodium were based on label values for McDonalds Big Mac available in 2010. Moisture is estimated by difference. Fibre, B2 and B3 were imputed from cheeseburgers from independent food outlets. The remaining nutrients were derived from a composite of 4 purchases of McDonalds Big Mac made in Sydney in around 1980; ash from this analytical program reduced in proportion to reduced sodium content since 1980.
