Flour, arrowroot

Flour ground from the starchy roots of a number of plants.

Fatty acids, sugars, vitamins and minerals were derived from a composite sample of 2 brands of flour (3x Sungrain and 3x McKenzies) purchased in Adelaide (AGAL 1987 - Cereal and cereal products). Cu, Mn, P, Cl, Se, S, F, ATOC, pyridoxine, pantothenate and biotin were derived from a composite sample of 3 brands of flour (4x McKenzie, 1x Maharajahs Choice and 3x Sungrown) purchased in Adelaide (1993 Cereal catch-up Program). Folate was borrowed from the UK 4th edition (3S), record 11-1 and dry matter adjusted.
