Crab, flesh only, purchased steamed or boiled

Flesh from crabs purchased freshly cooked by boiling or steaming.

Moisture, Ca, Cu, I, K, Mn, Na, Se, tocopherols, B6, B12, pantothenate and folate were derived from a composite of 8 samples of fresh, cooked crab purchased in Melbourne in February 2006. Protein, fat, ash, Fe, Mg, Zn, P B2 and vitamin C were derived from wild harvested Scylla serrata (mud crab) and wild harvested Scylla species, as reported in Brand-Miller et al (1991). Carbohydrates and fibre were imputed. Cholesterol and retinol were imputed from canned crabmeat. B1, B3 and carotenes were prepared for AUSNUT 1999.
