Brussels sprout, fresh, raw

Layers of small green leaves with white stems wrapped around a white base. Uncooked.

Proximates, vitamins and minerals were derived from a composite of five 1 kg purchases of fresh brussel sprouts from Sydney outlets during March-June 1982 (Wills et al. 1984). Folate was borrowed from the USDA, record 11098. Retinol, folic acid and cholesterol were imputed.
