Veal steak in breadcrumb coating. Pan fried in oil for 3 minutes each side, then drained of excess oil.

The majority of nutrients including proximates, minerals and fatty acids were derived from a composite of 4 samples of Susans brand veal schnitzel, purchased from retail outlets in Sydney in 1984. Samples were fried for 3 minutes each side and drained before analysis. Vitamins were derived from a composite of 4 samples of Barons Table brand veal schnitzel, purchased in Adelaide in 1988 (AGAL 1988). Samples were shallow fried in hot peanut oil for approximately 6-8 minutes, turning until brown, then drained on absorbent paper before analysis.
