Proximates, most vitamins and minerals are from a composite of 10 samples of loin chop purchased from 10 supermarkets/butchers across Sydney in from 1983-86. Fatty acids are imputed from a composite of 10 samples of veal cutlet purchased from 10 supermarkets/butchers in Melbourne and Sydney in 2002. B3 is imputed from a pooled sample of stir fry, diced, cutlet and leg steak cuts from the same program (MLA 2007). Iodine was calculated from the 22nd ATDS, 2004 value for Beef, steak, grilled, separable lean. Vitamin C is imputed from a composite sample of lean blade steak purchased from 9 butchers/supermarkets in Adelaide during 1988. Tryptophan is imputed from mince and rump steak samples from the 2006 and 2008 Key Foods Programs. Starch, fibre, individual sugars and ethanol are imputed zero.
