Turkey, hindquarter, lean, raw
Three Tegal frozen size 15-21 hindquarters were purchased from supermarkets in SA in December 1991. Skin and separable fat were removed. Composite raw sample was analysed for proximates, carbohydrates, vitamins, minerals and fatty acids (AGAL,1992).
