Commercially prepared sauce based on fermented black beans, salt and sugar.

The majority of nutrients including proximates, vitamins, minerals and fatty acids were derived from a composite sample of 3 imported brands (Ayam, Changs, Lee Kum Kee) of black bean sauce, purchased in Sydney in 1991 (Ethnic Foods Program). Fibre estimated based on food containing 50% canned mixed beans.
