Salmon, Atlantic, fillets, raw

Uncooked, largely skinless fillets of fresh salmon, produced by aquaculture.

As, Cd, Co, Cr, Cu, Hg, Mo, Ni, Pb, Sb, Se and Zn were derived from 10 individual samples collected at the point of importation into Australia (generally from Norway) in 2005. Subsamples were combined into three composites for analysis of moisture, protein, fat and fatty acids. Sugars, starch, Chol, Ca, Fe, Mg, P, K, Na & Mn were derived from sashimi salmon collected in Sydney in around 1998. Tryptophan is borrowed from USDA, record 15236. Vitamin C, fibre and carbohydrates were imputed.
