Salad, coleslaw, commercial

A salad typically made from finely shredded purple or green cabbage and carrot in a mayonnaise type dressing; as purchased in supermarkets and take-away or fast food outlets.

The majority of nutrients including proximates, carbohydrates, organic acids, vitamins, minerals and fatty acids were derived from a composite sample containing 4 purchases of coleslaw from Kentucky Fried Chicken outlets in Sydney in 1981 (Wills et al 1982). Moisture and minerals (Ca, K, Na and I) were derived from a composite of 8 samples (3x Woolworths, 2x Coles deli and 1 each x KFC, Millcroft and Mrs. Crockets) of commercial coleslaw purchased from Melbourne supermarkets in 2005 (FSANZ, Iodine Project, 2006). Folate was imputed from raw white cabbage.
