Rice, purchased as parboiled (gold rice), raw

Unhulled grain that has been soaked, pressure-steamed and dried before milling. Process gelatinizes the starch in the grain and infuses some of the nutrients of the bran and germ into the kernels heart, which becomes pale beige in colour. Uncooked.

Sugars, and some vitamins and minerals were derived from a composite sample of 4 packets of Sungold rice grown in southern NSW and purchased in Sydney (Comp. of Aust Foods.13-Rice - Food Tech. Aust 34:66-68). Dietary fibre, Cu, Mn, P, Cl, Se, S, F, ATOC, B6, pantothenate and biotin were derived from a composite sample of 8 packets of Sungold parboiled rice purchased in Adelaide (1993 Cereal Catch up program). Vitamin C content imputed as zero.
