Lamb, tongue, simmered

Tongue from a lamb, trimmed of cartilage, simmered and drained.

The majority of nutrients were derived from four samples collected in Sydney. The ratio of purchase was 2:1 butchers shop to supermarket. Sugars and fibre were imputed zero. The samples were cooked after dressing and inedible parts removed.
