Raw lamb from the midsection of the carcase. Lean muscle meat with some inseparable internal fat. Majority of internal and external separable fat removed.

Nutrient values have been calculated by combining values in the separable lean (96.0 x 08A20560) and separable fat (4.0 x 08A20638) records in the proportions found in an average sample of lean Frenched cutlet/rack.
