Ginger, peeled, raw

Thick tuberous vegetable with brown skin and pale yellow flesh. Uncooked.

The majority of nutrients including proximates, vitamins and minerals were derived from a composite of 5x 1 kg purchases of ginger from 5 retail outlets from Sydney suburbs in 1983/1994 (Wills et al. 1987). Folate was borrowed from the USDA, record 11216. Retinol, folic acid and cholesterol were imputed.
