Fish burger, with cheese, fast food chain-style

Commercially prepared crumbed fish fillet with cheese and tartare sauce in a white bun, as purchased in fast food outlets.

Proximates, B2, B3 and minerals were derived from a composite of 4 samples of fish burgers purchased from McDonalds fast food restaurants in Sydney in 1979, and updated with 2010 product information provided by McDonalds (www.mcdonalds.com.au) for sodium, protein, fat, saturated fat and sugars. B1 was estimated from a composite of 12 samples of fortified burger buns collected in around 1980, with estimation of the vitamin levels in the complete product based on the proportion of bun. Fatty acid subtotals were estimated based on label saturated and total fat contents, and noting that products are fried in canola oil. Fibre content imputed based on 31% white bread roll.
