Custard, dairy, regular fat, vanilla, commercial
Proximates, vitamins and some minerals were derived from a composite sample of 4 varieties (Dairy Farmers UHT, Peters Farm, Oak and Dairy Farmers - from Australia), purchased from 2 outlets in Sydney and analysed in 1988/89 by AGAL. I was determined from samples of Australian custard as reported by the ADC (1999). Starch origin is unclear. Folate borrowed from UK 6th edition, record 321. Fatty acid profile is for milk, butter, etc. (ADC 1991), as per NUTTAB95. I, Ca, Na, K and P were determined in a composite sample of 8 purchases (2 each of Pauls Premium, Dairy Farmers, Coles and Pauls) in Melbourne in late 2005. Dietary fibre was imputed.
