Coconut, cream

Liquid extract of the flesh of mature coconuts, containing significant levels of fat so that it has a creamy appearance. Supplied canned or in UHT tetrapaks.

Proximates and most vitamins and minerals are averaged from three analytical programs. The first program analysed a composite of 6 samples (2x Harlen, 2x Hawaii and 2x Ayam) purchased in Adelaide in April 1989. The second program analysed a composite of 12 samples (Chefs Choice, Home Brand, Royals, Samoa, Ayam, Sahibs Choice, No Frills, Trident, P.A.T., Savoy, Du Chef and M&S) purchased in Sydney in 1996. The third program analysed a composite of 8 samples (2x Harlen, 2x Jaya, 2x Kara and 2x Hawaii) purchased in Sydney in 1996. Fatty acids were determined only in the 1989 samples only. Folate was borrowed from the USDA, record 12116. Retinol and cholesterol were imputed.
